  Burratina from our Puglia, red fruit compote deglazed with balsamic Meurette style 
• MAIN COURSE:
  Chicken supreme, button mushroom duxelles, Boulangère apples, truffle sauce
  or/ Champagne-style braised cod steak, artichoke button, carrot mousseline with citrus fruits
  or/ Beef fillet just seared, grilled vegetables of the moment, béarnaise 
• CHEESE:
  Plate of mature cheeses (Brie de Meaux, Comté, Sainte Maure) Optional (+10€) 
• DESSERT:
  Maxim's Velvet (chocolate/Earl Grey tea ganache, raspberry cookie)
